It’s a common dish - not soooo traditional but one of my favourites!
Most people in the villages boil the meat and just add chilly and salt and serve with cassava, sweet potatoes, and (posho) maize flour or millet mingled.
Ingredients
8 Sweet potatoes
Good quality beef, £7-00
1 tin chopped tomatoes
Tomato puree (1 tsp)
2 medium onions
½ tsp curry powder
½ tsp chilli (optional)
Cooking Method
1. Peel potatoes, wash and then put to boil for 15-20 minutes using a knife to check they’re fully cooked inside. (The knife should go through the potatoes then you know it’s cooked).
2. Drain the water or remove it and put it in a bowl ready for serving
3. The meat should be chopped into medium sized cubes and then washed
4. Fry onions in a medium pan until golden brown
5. Add beef and fry until tender
6. Add chopped tomatoes and let it simmer for 5 minutes
7. Add 1 teaspoon of tomato puree, then half tea spoon of curry powder
8. Let simmer for a further 5 minutes and serve with potatoes.
