It’s a traditional Ugandan dish, easy to cook and it is very good for those veggie people! The ingredient is also very cheap; just open you store take out the ground nuts and pound using pestle.
Ingredients
Peanut dish
Peanut flour (1 cup)
1 big onion
½ cabbage (sliced)
½ cup cooking oil
1 teaspoon salt
1 medium chilli chopped
2 cups of water
1 cup of rice or three sweet potatoes peeled
Spinach dish
Spinach
2 medium onions
1 tin chopped tomatoes
¼ tsp salt
1 small chilli
Sides: Either
2 sweet potatoes
Rice
Cassava
Cooking Method
Peanut dish
- Heat about ½ a cup of cooking oil to a medium pan
- Add one well chopped onion to the pan and fry until it is brown
- Add chopped tomatoes
- Finely chop the chilli and fry until it is a paste
- Mix a cupful of groundnut (ground peanut) with water until it is paste then add to the ingredients in the pan
- Add two cups of water
- Finely chop cabbage and add to pan
- Add a teaspoon of salt
- Leave to cook for 30 minutes
- Serve with either rice or sweet potatoes
- Sit down on the mat and eat with your fingers!
Spinach dish
- Wash spinach thoroughly
- Fry cooking oil in a pan with diced onions until brown
- Add chopped tomatoes
- Add ¼ teaspoon of salt
- Add 1 small chilli (well chopped; so that you can feel the burn on your tongue)
- Cook until it is a good paste
- Add the spinach and let it cook for at least 20 minutes
- Serve with rice, sweet potatoes or even cassava
- And do not forget to drink plenty of water!
